1 stick celery
1/4 green bell pepper
1/4 onion
1 cup rice
2 cups water
1 clove garlic
1/3 cup frozen peas and carrots
1 teaspoon salt

Cut the stick of celery into very small squares.

Chop the green bell pepper into quarters.

Finely chop a quarter of an onion.

Prepare peas and carrots (frozen or corn) and finely chop some cilantro.

Rinse 1 cup of rice until the water runs more transparent.

Add a splash of avocado oil to a large frying pan.

Add the finely chopped onion to the pan and fry for 1-2 minutes until it looks more crystalline but not burnt.

Add the cup of rice to the pan and mix with the onion for about 1 minute.

Add the chopped celery and green bell pepper to the rice and mix.

Add 2 cups of water to the pan, which has been liquefied with the onion and garlic.

Add a little more water if desired, then mix.

Add the chopped cilantro and stir to incorporate.

Add approximately 1/3 cup of frozen peas and carrots (or corn if preferred).

Add 1 teaspoon of salt and stir to integrate the salt into the rice.

Cover the pan and cook on medium-low heat for approximately 20 minutes.

Check to see if the water has been absorbed by the rice; if almost no water remains, check the rice with a stick to see if it's ready.

Turn off the heat and let the rice sit for 3-5 minutes.

Open the pan and stir the rice with a shovel to prevent sticking.
