Soak walnuts for about an hour to an hour and a half for easier digestion.
Pulse soaked walnuts in a food processor until textured but not completely mashed.
Add 1 cup of cooked lentils to the food processor with the walnuts.
Add 2 cloves of garlic, cumin, chili powder, black pepper, and salt to the mixture in the food processor and blend.
Add tomato paste to the mixture and blend again briefly.
Heat olive oil in a large skillet over medium heat.
Add diced red and green bell peppers and half of a diced yellow onion to the skillet and sauté for about 5 minutes until soft.
Add the walnut and lentil mixture to the skillet and combine well, cooking for 3-4 minutes.
Add 1 cup of tomato sauce, Dijon mustard, maple syrup, and apple cider vinegar to the skillet and stir to combine.
Cook for another couple of minutes until heated through and flavors meld.
Serve the mixture on potato buns.
