Wafu Pasta

400 grams spaghetti
2 cans tuna
1 onion
shimeji mushrooms
4 tbsp soy sauce
2 tbsp mirin
2 tsp instant Japanese stock
1 tbsp minced garlic
1 tbsp butter
green onion for garnish

Boil water in a pot for the spaghetti.

Add 400 grams of spaghetti to the boiling water.

While the spaghetti is cooking, prepare the sauce.

Cut the bottom off the onion and peel it, then chop it.

Cut the bottom off the shimeji mushrooms and break them into small pieces.

Heat some vegetable oil in a skillet over medium heat.

Add 1 tbsp of minced garlic to the skillet and sauté until fragrant.

Add the chopped onion and shimeji mushrooms to the skillet and cook until softened.

Add 4 tbsp of soy sauce, 2 tbsp of mirin, and 2 tsp of instant Japanese stock to the skillet.

Add 100 milliliters of the spaghetti cooking water to the sauce and mix well.

Once the spaghetti is cooked, drain it and add it to the skillet with the sauce.

Turn off the heat and add 1 tbsp of butter to the skillet, mixing until melted and combined with the spaghetti.

Plate the spaghetti and top with the cooked vegetables and a sprinkle of green onion.
