Brown 1/2 pound of spicy Italian sausage in 2 tablespoons of oil for about 3 minutes, stirring to crumble it into small pieces until fully cooked.

Turn down the heat and add 8 ounces of pre-cooked dried penne pasta to the pot, stirring to combine.

Fold in 1/2 pound of fresh spinach until it wilts from the heat of the sausage and pasta.

Add 1 jar of sun-dried tomatoes, cut into julienne strips, to the mixture.

Add 1/2 cup of part-skim ricotta cheese and toss everything together until well combined.

Garnish with parmesan cheese before serving.
