Prepare the crumble by mixing cake flour, sugar, ground almonds, salt, unsalted butter, and egg white until crumbly.

Press the crumble mixture into a tart mold and bake until golden.

For the whipped cream, whip heavy cream with sugar until soft peaks form.

For the matcha mousse, whisk egg yolks and sugar until pale, then add milk and heat until warm.

Dissolve gelatin in cold water and mix into the warm egg mixture.

Add matcha tea and mix well, then fold in whipped cream gently.

Pour the mousse into the cooled tart shell and refrigerate until set.
