1

Add vegetable broth to a pot and cook the mung beans according to the package directions.

2

Soak the mung beans for a couple of hours or overnight for better results.

3

Chop onions, garlic, and mushrooms and sauté them over the stove.

4

If you want some of the sautéed items as toppings, double the ingredient amounts.

5

After cooking, add the sautéed items to a blender along with beets, balsamic vinaigrette, and seasoning blend.

6

Transfer the blended mixture to a large mixing bowl and add about 75% of the vital wheat gluten, mixing well until combined.

7

Add cold coconut oil pieces and sesame oil to the mixture, working quickly to keep the coconut oil in chunks.

8

Knead the mixture by hand for about 5 minutes, being careful not to over-knead to avoid toughness.

9

Line a flat surface with parchment paper and shape the mixture into half-inch thick slabs for patties.

10

Place the prepared patties in the fridge for an hour to let them rest and firm up.

11

Add a little more oil to your pan and cook the patties on medium to medium-high heat until both sides develop color.

12

Toast the sesame seed buns and spread vegan mayo on them.

13

Place the cooked patty on the bun, add melted vegan cheese, and stack with tomato, pickles, lettuce, and onions.

14

Assemble the burger and serve.
