Slice tomatoes into thick rounds.
Sprinkle salt on the tomato slices and let them sit for 10 minutes to draw out moisture.
Pat the tomatoes dry with a paper towel.
Dredge each tomato slice lightly in flour, shaking off excess.
Heat olive oil in a skillet over medium heat until shimmering.
Add the tomato slices to the skillet in a single layer.
Fry the tomatoes for 3-4 minutes on each side until golden brown.
Remove the tomatoes from the skillet and place on paper towels to drain excess oil.
In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
Crumble bryndza cheese over the fried tomatoes.
Drizzle with the sautéed garlic and sprinkle with black pepper and fresh herbs.
Serve warm as a side dish.
