Pour a little bacon grease into a cast iron skillet and spread it around with a paper towel.
Preheat the oven to 350°F (175°C) with the skillet inside.
In a mixing bowl, crack 5 eggs and add in 6 tablespoons of melted butter.
Add 1 tablespoon of sweet corn extract to the egg mixture and mix well.
In another bowl, combine 1.5 cups of almond flour, 1/4 cup of coconut flour, 2 tablespoons of sweetener blend, 1/4 teaspoon of salt, and 2 teaspoons of baking powder.
Mix the dry ingredients together until well combined.
Add 1 tablespoon of water to the mixture.
Fold in 1 cup of pork cracklings into the batter and mix well.
Remove the hot skillet from the oven carefully using an oven glove.
Pour the batter into the hot skillet and smooth it out.
Return the skillet to the oven and bake for 20-25 minutes.
After 25 minutes, remove the skillet from the oven and let it cool for 10 minutes before slicing.
