300g Beef Mince
75g Carrots (Diced)
75g Celery (Diced)
75g of Onion (Mix of red and White Diced)
75ml Olive Oil
2 Bay Leaves
2 Sprigs of Rosemary
75g Unsmoked Pancetta
100g Chicken Livers (Optional, finely chopped)
3 Cloves Garlic (finely chopped)
75ml Milk
100ml Water
100ml Red Wine
400g Plum Tomatoes
Parsley (for Garnish)

Heat Olive Oil and fry Garlic for 1 minute

Add Carrots, Celery and Onion and fry for around 10 minutes (or until soft)

Add Rosemary and Bay Leaves and fry for a further 5 minutes

Add the Unsmoked Pancetta, Chicken Livers (if using) and Beef Mince to the pan and fry until browned

Add the Red Wine and cook this off for about 5 minutes

Add the Plum Tomatoes

Rinse out the tin with 100ML of water and add this

Mix well and simmer for around 30 minutes

Check the seasoning

Add the Milk and Mix well and cook for a further 15 Minutes

Check consistency (add more water if a little dry)

Serve and Garnish
