Rinse eggplants under cold water and pat dry with paper towels.
Heat olive oil in a large skillet over medium heat until shimmering.
Dredge eggplant slices in flour, shaking off excess, then dip in beaten egg, and coat with bread crumbs.
Fry eggplant slices in the hot oil until golden brown, about 3-4 minutes per side.
Remove fried eggplants and drain on paper towels.
In the same skillet, sauté chopped onion and minced garlic until translucent, about 3-4 minutes.
Add diced tomatoes and oregano; cook until sauce thickens, about 5-7 minutes.
Stir in crumbled feta cheese and mix until melted and combined.
Layer fried eggplants in a baking dish and pour the tomato-feta sauce over them.
Bake in a preheated oven at 180°C (350°F) for 15-20 minutes until bubbly.
Garnish with chopped parsley and a squeeze of lemon juice before serving.
