Arrowroot is a gluten-free thickener.

Pour 1 cup of water into a saucepan.

Add 1 and 1/4 cups of sugar, 1/2 teaspoon of salt, 1 cup of vinegar, 2 teaspoons of chili flakes, and 1/2 teaspoon of chili powder to the saucepan.

Mix the ingredients well in the saucepan.

Boil the sauce for around 10 minutes until the sugar dissolves and the color develops.

Make a cornstarch slurry by mixing 2 tablespoons of cornstarch with 2 teaspoons of water.

Pour the cornstarch slurry into the saucepan.

Cook the sauce for around 6 to 7 minutes until thickened and glossy.

Allow the sauce to cool completely and let it sit in the fridge for 24 hours to develop flavors.
