Trim excess fat from the pork shoulder roast.

Cube the pork shoulder roast into small pieces.

Grind about two-thirds of the cubed pork using a meat grinder with a quarter-inch die.

Keep one-third of the cubed pork as chunks.

Mix the ground and chunked pork together.

Add 3 teaspoons of salt, 1 teaspoon of celery seed, 1.5 teaspoons of gelatin powder, 1.5 teaspoons of paprika, 3/4 teaspoon of black pepper, and 1.5 teaspoons of honey to the meat mixture.

After 48 hours, place the ham maker in 185-degree water until the internal temperature reaches 165 degrees Fahrenheit.
