  • 4 large portabella mushrooms

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt to taste
  • Pepper to taste
  • 4 slider buns
  • 1 cup coleslaw (optional)
  • Pickles (optional)

Instructions

  1. 1Preheat the grill to medium-high heat.
  2. 2Clean the portabella mushrooms and remove the stems.
  3. 3In a bowl, mix the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. 4Brush the mixture onto both sides of the portabella mushrooms.
  5. 5Grill the mushrooms for about 5-7 minutes on each side, until tender.
  6. 6During the last few minutes of grilling, brush BBQ sauce on the mushrooms.
  7. 7Remove the mushrooms from the grill and let them rest for a minute.
  8. 8Assemble the sliders by placing a grilled portabella mushroom on each slider bun.
  9. 9Top with additional BBQ sauce, coleslaw, and pickles if desired.

  • 4 slider buns
  • Lettuce leaves for garnish

Instructions

  1. 1Preheat the oven to 375°F (190°C).
  2. 2Clean the portabella mushrooms and remove the stems.
  3. 3In a bowl, mix the cooked quinoa, breadcrumbs, curry powder, salt, black pepper, and chopped cilantro until well combined.
  4. 4Stuff each portabella mushroom cap with the quinoa mixture, pressing down gently to pack it in.
  5. 5Place the stuffed mushrooms on a baking sheet and bake for 20-25 minutes, or until the mushrooms are tender.
  6. 6While the mushrooms are baking, prepare the curry mayo by mixing mayonnaise and lemon juice in a small bowl.
