6 Sliders to do this summer

- ●4 large portabella mushrooms
- ●1/2 cup BBQ sauce
- ●1 tablespoon olive oil
- ●1 teaspoon garlic powder
- ●1 teaspoon onion powder
- ●1/2 teaspoon smoked paprika
- ●Salt to taste
- ●Pepper to taste
- ●4 slider buns
- ●1 cup coleslaw (optional)
- ●Pickles (optional)
Instructions
- 1Preheat the grill to medium-high heat.
- 2Clean the portabella mushrooms and remove the stems.
- 3In a bowl, mix the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
- 4Brush the mixture onto both sides of the portabella mushrooms.
- 5Grill the mushrooms for about 5-7 minutes on each side, until tender.
- 6During the last few minutes of grilling, brush BBQ sauce on the mushrooms.
- 7Remove the mushrooms from the grill and let them rest for a minute.
- 8Assemble the sliders by placing a grilled portabella mushroom on each slider bun.
- 9Top with additional BBQ sauce, coleslaw, and pickles if desired.
- 10Serve immediately and enjoy your BBQ Portabella Sliders.

- ●1/2 cup breadcrumbs
- ●1/4 cup curry powder
- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●1/4 cup chopped fresh cilantro
- ●1/4 cup mayonnaise
- ●1 tbsp lemon juice
- ●4 slider buns
- ●Lettuce leaves for garnish
Instructions
- 1Preheat the oven to 375°F (190°C).
- 2Clean the portabella mushrooms and remove the stems.
- 3In a bowl, mix the cooked quinoa, breadcrumbs, curry powder, salt, black pepper, and chopped cilantro until well combined.
- 4Stuff each portabella mushroom cap with the quinoa mixture, pressing down gently to pack it in.
- 5Place the stuffed mushrooms on a baking sheet and bake for 20-25 minutes, or until the mushrooms are tender.
- 6While the mushrooms are baking, prepare the curry mayo by mixing mayonnaise and lemon juice in a small bowl.
- 7Once the mushrooms are done, remove them from the oven and let them cool slightly.
- 8To assemble the sliders, spread a layer of curry mayo on the bottom half of each slider bun.
- 9Place a stuffed portabella mushroom on each bun, top with lettuce, and cover with the top half of the bun.
- 10Serve immediately and enjoy your Curry Portabella Sliders!

- ●1/4 teaspoon black pepper

- ●1 cup arugula
- ●1/2 cup sliced tomatoes
- ●1/4 cup pesto sauce

- 1Preheat the grill to medium-high heat.
- 2In a bowl, mix olive oil, balsamic vinegar, garlic powder, onion powder, salt, and black pepper.
- 3Brush the portabella mushrooms with the marinade on both sides.
- 4Place the mushrooms on the grill and cook for about 5-7 minutes on each side, or until tender.
- 5While the mushrooms are grilling, toast the slider buns on the grill until golden brown.
- 6Once the mushrooms are cooked, remove them from the grill and let them cool slightly.
- 7Assemble the sliders by placing a grilled portabella mushroom on each bun.
- 8Top each mushroom with a few slices of tomato, a handful of arugula, and a spoonful of pesto sauce.
- 9Close the sliders with the top half of the bun and serve immediately.

- ●1/4 cup sliced jalapeños
- ●1 tbsp olive oil
- ●1 tsp garlic powder
- ●1 tsp onion powder
- ●1/2 tsp salt
- ●1/2 tsp black pepper
- ●4 slider buns
- ●Fresh cilantro for garnish
Instructions
- 1Preheat the oven to 375°F (190°C).
- 2Clean the portabella mushrooms and remove the stems.
- 3Brush the mushrooms with olive oil and season with garlic powder, onion powder, salt, and black pepper.
- 4Place the mushrooms on a baking sheet, gill side up.
- 5Spoon salsa into each mushroom cap, filling them generously.
- 6Top each mushroom with crushed tortilla chips and shredded cheddar cheese.
- 7Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- 8While the mushrooms are baking, prepare the slider buns by toasting them lightly.
- 9Once the mushrooms are done, remove them from the oven and let them cool slightly.
- 10Assemble the sliders by placing a mushroom on each bun, adding jalapeños and a dollop of sour cream on top.

- ●1 clove garlic, minced

- ●1/2 tsp black pepper
- ●1/2 tsp smoked paprika
- ●1/4 cup mayonnaise
- ●1 tbsp Dijon mustard
- ●4 slider buns
Instructions
- 1Preheat the grill to medium-high heat.
- 2In a large bowl, combine the ground pork, breadcrumbs, Parmesan cheese, parsley, garlic, salt, pepper, and smoked paprika. Mix until well combined.
- 3Form the pork mixture into small patties, about the size of the slider buns.
- 4Remove the stems from the portabella mushrooms and brush the caps with olive oil. Season with salt and pepper.
- 5Grill the portabella caps for about 5 minutes on each side until tender.
- 6While the mushrooms are grilling, cook the pork patties on the grill for about 4-5 minutes on each side, or until fully cooked.
- 7In a small bowl, mix together the mayonnaise and Dijon mustard to create a spread.
- 8To assemble the sliders, spread the mayonnaise mixture on the bottom half of each slider bun.
- 9Place a grilled pork patty on each bun, followed by a grilled portabella cap, and top with the other half of the bun.

- ●1/2 cup sliced tomatoes
- ●1/4 cup mayonnaise

- 2In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, garlic, salt, pepper, and smoked paprika. Mix until well combined.
- 3Form the mixture into 4 equal-sized patties.
- 4Remove the stems from the portabella mushrooms and brush the caps with olive oil. Season with salt and pepper.
- 5Grill the mushroom caps for about 5 minutes on each side until tender.
- 6Grill the beef patties for about 4-5 minutes on each side for medium doneness.
- 7Toast the slider buns on the grill for 1-2 minutes until golden brown.
- 8Assemble the sliders by placing a beef patty on each bun, topping with a grilled portabella mushroom, arugula, sliced tomatoes, and a dollop of mayonnaise.
- 9Serve immediately and enjoy your Steak Portabella Sliders.
