Grilled Mahi Mahi

4 Mahi Mahi fillets (about 6 oz each)
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1 lime (juiced)
1/2 onion (diced)
1 cup black beans (cooked)
1 cup cooked rice
1/2 cup water
1 teaspoon Tabasco sauce
1/4 cup marinade (coriander, celery, chilies, garlic, salt, olive oil, other herbs)

Squeeze lime over the fish and sprinkle salt to remove the fishy smell.

Coat the fish with the marinade and let it sit for 20-30 minutes.

Sweat onions in olive oil until transparent.

Add black beans, salt, black pepper, and Tabasco sauce to the onions and stir.

Add rice to the mixture and stir for 30 seconds.

Add water to the rice and beans mixture and cover to cook in the air fryer for 30-45 minutes.

Heat a skillet and add olive oil until smoking.

Add the marinated fish to the skillet and grill for 2-2.5 minutes on each side for well done, or 1 minute on each side for medium.

Remove the fish from the skillet and prepare a gravy with the marinade residue and water.
