Grilled Mahi Mahi

Heat a sauté pan with grill marks on medium high heat.
Coat the pan with extra virgin olive oil.
Coat the Mahi Mahi fish with olive oil.
Season the fish with crushed black pepper, kosher salt, and a pinch of granulated garlic.
Add fresh thyme to the fish.
Place the fish in the pan on a bias to create grill marks.
Cook the fish for 2 to 3 minutes on one side.
Turn the fish over and season the other side with kosher salt, black pepper, granulated garlic, and fresh thyme.
Cook the second side for another 2 to 3 minutes, adjusting time based on the thickness of the fish.
Rotate the fish a quarter turn to create crosshatch grill marks.
Plate the cooked fish and garnish with fresh lime or lemon wedges.
