Traditionally sold by vendors, these sesame-covered bread rings symbolize simplicity and community. Today, they are popular not only in Greece but also in various Mediterranean regions, where variations may include different toppings or fillings.

Place all the dry ingredients in a bowl starting with the flour.
Add salt on one side and yeast, baking powder, and mastic on the other side with one teaspoon of sugar.
Mix the dry ingredients together and make a well in the center.
Add olive oil to the well and mix until the flour resembles breadcrumbs.
Add half of the milk and knead, then add the rest of the milk and knead until the dough is thick and does not stick to your hands.
Cover the dough with a clean cloth and let it rest for an hour until it doubles in size.
Turn the dough out onto a surface, roll it out, and cut it into three pieces.
Shape each piece and place it on a baking tray lined with baking paper.
Sprinkle sesame seeds on top and make slits in the top at about 2 cm intervals.
Cover the shaped bread with a cloth and let it rest for another 20 minutes until it doubles in size.
Glaze the bread with egg yolk and sprinkle with sesame seeds.
Preheat the oven to 180°C and bake for 30-35 minutes until golden brown.
Check if the bread is cooked by tapping the bottom; it should sound hollow.
