Potato & Cheese Pierogi

Boil and mash 4 pounds of potatoes.

In a large bowl, mix mashed potatoes with 4 packs of farmer's cheese and a few spoons of sautéed onions. Add salt and pepper to taste and mix well.

In another bowl, add 1 full egg and 7 yolks, 2 tablespoons of vegetable oil, and 2 cups of hot water. Whisk together.

Gradually add 3 pounds of flour while mixing until combined. Knead the dough on a floured surface until soft and elastic.

Cover the dough with a wet kitchen towel to prevent drying out.

Roll out the dough to about 1/8 inch thickness, cutting circles with a glass about 2.5 inches wide.

Place a teaspoon of filling in the center of each circle, fold over, and seal the edges tightly.

Drop pierogi into boiling salted water, cooking no more than a dozen at a time until they float, then simmer for 1-2 minutes longer.

Remove pierogi with a slotted spoon and serve with sautéed onions and butter or bacon bits, and optionally sour cream.
