In a bowl, mix 2 cups of maize meal with 2 cups of tap cold water and set aside.
In a pot, add hot water (previously boiled in a kettle) and bring it back to a boil.
Once boiling, gradually add the maize meal mixture while whisking to prevent lumps.
Continue whisking until the mixture thickens, then cover the pot and simmer for 10 to 15 minutes on medium-high heat.
After 15 minutes, add margarine and fresh cream to the pot and mix gently until smooth and velvety.
If the mixture is not stiff enough, continue adding maize meal until desired consistency is reached.
Cover and cook for an additional 20 to 25 minutes, or up to 30 minutes on low heat, until fully cooked.
Add freshly chopped parsley and mix well before serving.
