Moroccan Meloui
Cultural Context
Meloui is a traditional Moroccan flatbread, often enjoyed for breakfast or as a snack. Its origins trace back to the Maghreb region, where it was commonly made by hand in homes and served with honey or jam. The unique layered texture is achieved through a folding technique, making it a delightful accompaniment to tea or coffee. Today, Meloui is cherished not only in Morocco but also in various North African communities, often adapted with different fillings or served with savory dishes.

Coconut oil is dairy-free and adds a unique flavor.

Whole wheat flour increases fiber content.
Mix all purpose flour, semolina, salt, sugar, and yeast in a bowl.
Gradually add lukewarm water to the dry ingredients, mixing until a dough forms.
Knead the dough on a floured surface with the oil until smooth, about 10 minutes.
Cover the dough and let it rest for 30 minutes in a warm place.
Divide the dough into equal portions, about the size of a golf ball.
Flatten each ball into a thin disc using your hands or a rolling pin.
Brush melted butter on each disc and fold it into a square.
Let the folded dough rest for another 15 minutes.
Heat olive oil in a skillet over medium heat until shimmering.
Cook each folded dough piece in the skillet until golden brown, about 2-3 minutes per side.
Remove from the skillet and drain on paper towels.
Serve warm, optionally with honey or jam.
