Boil water in a kettle.
Dice the potatoes into 1-inch pieces.
Add 1.5 tablespoons of olive oil to a tray.
Add mustard seeds and curry leaves to the tray.
Add 2 teaspoons of turmeric to the tray.
Finely chop 4 cloves of garlic and add to the tray.
Add chicken thighs, skin on, to the tray.
Steam the potatoes for about 5 minutes until tender.
Chop orange and red peppers into 1-inch chunks and add to the tray.
Roughly chop an onion and add to the tray.
Add chili and tomatoes to the tray.
Season with salt and black pepper.
Add the potatoes to the tray and mix everything together.
Place the chicken on top of the mixture in the tray.
Bake in the oven for about 45 minutes.
Prepare a mint, chili, and ginger yogurt by mixing 150 ml of yogurt with half a chili, a tiny piece of ginger, and the juice of half a lemon.
Plate up the tray bake and serve with a baby spinach salad and the yogurt sauce.
