Combine warm water and sugar in a bowl and sprinkle yeast on top. Let sit until foamy, about 5 minutes.
Preheat the oven to 400°F (200°C).
In a large mixing bowl, combine half of the bread flour and all-purpose flour with salt.
Add softened butter to the flour mixture and mix well.
Add the yeast mixture to the flour mixture and stir until it starts pulling away from the sides of the bowl.
Knead the dough on a floured surface for about 5-8 minutes, adding more flour as needed to prevent sticking.
Place the dough in an oiled bowl, cover with plastic wrap, and let rise for 1.5 hours until doubled in size.
Divide the risen dough into 12 equal pieces and roll each into a stick.
Place the breadsticks on a parchment-lined baking sheet and let rise again for about 1 hour.
Melt 2 tablespoons of butter and mix with roasted garlic for brushing.
Bake the breadsticks in the preheated oven for about 10 minutes until golden brown.
Brush the tops of the breadsticks with the garlic butter mixture and sprinkle with salt.
