Process the cabbage until finely chopped and transfer it to a mixing bowl.

Chop parsley and add it to the mixture, keeping it in larger pieces for visibility.
Season the salad with salt and black pepper.
Juice one lemon and add the juice to the salad.
Pour in 1/4 to 1/3 cup of olive oil and mix everything together until evenly coated.
Transfer the salad to a serving board.
Crumble feta cheese over the top of the salad.
Add kalamata olives on top of the salad.
Slice pre-cooked greek sausages and place them on the side of the salad for presentation.
