250 g flour
½ tsp salt
100 ml buttermilk
2 tbsp olive oil
300 g squash (Hokkaido)
1 apple
1 red onion
100 g goat's cheese
100 g sour cream
50 g shelled walnuts
2 sprigs of rosemary
4 tsp honey
Freshly ground pepper
1 bunch of rocket

Crumble yeast and dissolve in 4 tbsp warm water.

Knead flour, salt, buttermilk and oil with the hooks on your hand mixer and then use your hands to form a smooth dough.

Shape into a ball and allow to prove in a warm place for 2 hours.

Halve and remove the seeds from the squash.

Core the apples.

Finely slice the squash, apple and onion.

Mix goat's cheese with sour cream until smooth.

Coarsely chop walnuts.

Strip the rosemary leaves from the sprigs.

Pre-heat a baking tray in the oven at 250 degrees (fan oven not recommended).

Knead the dough with your hands and divide into 4 portions.

One at a time, roll each out on 1 sheet of baking parchment, allow to rest for 10 minutes and then roll out even more thinly.

Spread the goat's cheese and sour cream mixture over the round dough.

Arrange squash, onions, walnuts and rosemary on top.

Season with salt, pepper and honey.

One at a time, pull the flatbreads by the baking parchment onto the hot baking tray and bake on the middle shelf of a hot oven for 5-7 minutes.

Sprinkle over cleaned and washed rocket and serve immediately.
