Add minced garlic and cook for an additional minute until fragrant.
Stir in crumbled chorizo and cook until browned, about 5-7 minutes.
Mix in diced tomatoes, cumin, paprika, salt, and black pepper; cook for 3-4 minutes.
Combine the walnut mixture with the chorizo mixture in a large bowl.
Add breadcrumbs, lime juice, and half of the cheddar cheese; mix well.
Transfer the mixture to a greased baking dish and spread evenly.
Top with remaining cheddar cheese and a sprinkle of parsley.
Bake for 25-30 minutes until golden and bubbly.
Remove from oven and let cool for a few minutes before serving.
