Heat a little olive oil in a saucepan.
Add finely chopped onion and the green part of the scallion, setting the leaves aside for later.
Add garlic if desired and a pinch of salt, cooking over medium heat for about 5 minutes until the onion is translucent.
Add cooked chicken (wings, breast, or thighs) to the pan.
Season with dried thyme and jalapeño if using, mixing for 2 minutes to heat up.
Add white wine and mix, waiting for the alcohol to evaporate (about 2 minutes after boiling).
Once the alcohol smell is gone, add broth and mix.
Turn the heat down to low and let it cook for about 10 to 15 minutes until all the liquid has evaporated.
Once the filling is dry, turn off the heat and divide it into three equal parts to cool to room temperature.
For the first filling, mix one part of the chicken mixture with finely chopped green onion tops and about 5-6 tablespoons of mayonnaise, adding salt and pepper to taste.
For the second filling, add salt, pepper, and a couple of tablespoons of mustard to another part of the chicken mixture, then mix in cream.
For the third filling, add salt, pepper, lemon juice, avocado, and cilantro to the last part of the chicken mixture and mix well.
To make the sauce for the sandwiches, mix mayonnaise and milk gradually until achieving a consistency that is not too runny or thick.
Assemble the sandwiches using white bread, moistening the breadcrumbs with the sauce.
Add a layer of sliced cheese on top of the sauce, then another layer of breadcrumbs, pressing down slightly.
Add the chicken with green onions evenly over the breadcrumbs, followed by another layer of breadcrumbs, pressing down slightly again.
Spread mayonnaise on the next layer of bread, add sliced cheese, and a small amount of sauce.
Add another layer of bread, brushing it with a little sauce, then add the chicken and avocado filling.
Add another layer of bread, then another layer of breadcrumbs, followed by mayonnaise and cheddar cheese.
Add thinly sliced tomatoes on top of the cheese, sprinkle with pepper, and add a tiny bit of sauce.

Cut off all four edges of the assembled sandwich to make them even before slicing into portions.
