In a bowl, mix the hydrated chia seeds with 3 cups of instant cornmeal by hand.

Add a little warm water to the mixture until it forms a dough.

Make a ball of dough and knead it.

Place the dough ball in a tortilla press and press it flat.

Heat a comal (griddle) over medium heat.

Carefully place the pressed tortilla onto the hot comal.

Cook until it starts to inflate, then flip it over.

Check for toasted parts and press the tortilla in the middle to help it inflate further.

Remove the cooked tortilla and keep it warm while continuing to make more.
