Tater Tot Egg Bites are a fun and innovative American dish that combines the beloved tater tot with a savory egg mixture. This dish is perfect for brunch or as a hearty snack, showcasing the versatility of tater tots beyond their traditional role as a side. Today, variations abound, with many adding different vegetables or proteins to suit personal tastes.
Preheat the oven to 375°F.
Cut the bell peppers notch to notch to remove the seeds and core.
Chop the bell peppers into smaller pieces.
Sprinkle the chopped bell peppers into the muffin pan with tater tots.
Whisk the eggs with milk until pale yellow and well incorporated.
Add about half a teaspoon of garlic to the egg mixture.
Pour the egg mixture over the tater tots and bell peppers until they are submerged.
Prepare a second egg mixture with more eggs and milk for the other tray.
Top the egg bites with cheese before baking.
Bake in the oven for 20 to 25 minutes until golden brown on top.
Let the egg bites cool before removing them from the muffin pan.
For freezing, lay the egg bites flat on a baking sheet to flash freeze before transferring to a container.
