4 servings
Servings4
1/2 courgette
asparagus (thick, sliced in half)
sugar snap peas
1 small ciabatta roll (gluten-free)
extra virgin olive oil
1 teaspoon red wine vinegar
salt
black pepper
chopped basil
olives
parmesan cheese (about 1 tablespoon)
1

Start by preparing the vegetables: add 1/2 courgette to a bowl.

2

Slice thick asparagus spears in half and remove woody ends, then add to the bowl.

3

Add sugar snap peas to the bowl with the other vegetables.

4

Drizzle a teaspoon of extra virgin olive oil over the vegetables.

5

Season the vegetables with black pepper and salt, then toss to coat them evenly.

6

Place the seasoned vegetables into the air fryer basket, spreading them out for even cooking.

7

Air fry the vegetables at 200°C for 10 minutes until they start to blister.

8

While the vegetables are cooking, prepare the ciabatta by cutting it into chunks and tossing it with a little olive oil.

9

After 10 minutes, push the vegetables to one side of the air fryer and add the ciabatta chunks to the other side.

10

Air fry the ciabatta for an additional 2 and 1/2 minutes until crispy and golden.

11

To make the dressing, combine 1 teaspoon of red wine vinegar, 2 teaspoons of extra virgin olive oil, and chopped basil in a bowl. Mix well and season lightly with salt and pepper.

12

Assemble the salad by placing the cooked vegetables on a plate, followed by the basil dressing, olives, crispy ciabatta croutons, and shavings of parmesan cheese.
