Add beans to a pressure cooker with 1 bay leaf and 1-2 pieces of ham or neck bones. Cook for 1.5 hours or 40 minutes in a pressure cooker until tender. Drain beans and save the broth.

In another pot, cook your Sofrito: add 2 tbsp of oil to sauté 1 medium onion diced, 1 red pepper, and 1 green pepper with 4 cloves of garlic. Add 1 tsp oregano, 1/2 tsp cumin, 1 bay leaf, 1 tbsp Sazon completa, salt, and pepper to taste. Add diced bacon, ham, or chorizo for flavor. Stir fry for 3 minutes to coat the rice.

Add the beans and 2-3 cups of bean stock, 1 tsp vinegar, and 1 tsp sugar.

Bring to a boil and cook on low heat for about 25 minutes or until liquid is almost absorbed by the rice. Lower the flame, cover the pot with foil or a lid to seal in the steam. If rice is still hard, add 1/4 cup of bean broth.
