1/2 tablespoon sugar

Soak the dried chilies in 2 tablespoons of white vinegar for 15-20 minutes until they soften.

To make the peri-peri sauce, blend 1 medium red bell pepper, the soaked chilies, 1/2 tablespoon oregano, 1 tablespoon Kashmiri red chili powder (or paprika), juice of 1/2 lemon, and 3 tablespoons sunflower oil together.

Add 1/2 teaspoon salt to the blended mixture and set aside half a cup of the peri-peri sauce.

Marinate the chicken leg pieces with the remaining peri-peri sauce and 1 tablespoon salt.

In a pan, heat 3 tablespoons of oil and place all the chicken leg pieces in it.

Add 1/4 cup tomato sauce and 1 tablespoon Kashmiri red chili powder to the pan with the chicken.

Cook the chicken on medium flame for 5-6 minutes on one side without covering the pan to avoid water release.

Flip the chicken and cook for another 5-6 minutes on the other side without covering the pan.

Once the water has evaporated, coat the chicken with the peri-peri sauce and grill it for 7-8 minutes until grill marks appear.
