Take one sheet of Pepperidge Farm puff pastry out of the package and put the other back in the freezer.
Let the puff pastry sit out for about 30 minutes to thaw, checking it after that time.
Sprinkle a little flour on the surface to prevent sticking, using less than a tablespoon.
Roll out the puff pastry to approximately 10 by 13 inches to allow for folding the crust over the filling.
Place the rolled-out dough on a parchment-lined baking sheet.
Sprinkle a little poppy seed and ground thyme over the dough for flavor.
Spread 1/4 cup of fig fruit spread on one side of the dough and 1/4 cup of orange marmalade on the other side, leaving about an inch from the edges.
Preheat the oven to 375°F (190°C).
Slice the brie cheese thinly after chilling it in the freezer for about 5-7 minutes to make it easier to cut.
Arrange the sliced brie on the dough, keeping it about an inch from the edges.
Fold the edges of the dough over the cheese, pinching to hold the crust in place.
Dust a little more thyme on top of the folded crust.
Beat one egg and brush it over the crust to give it a golden color while baking.
Bake in the preheated oven for 30 minutes, checking for doneness and browning.
Remove from the oven and let cool slightly before slicing into pieces.
