Preheat the oven.

In a bowl, beat the egg whites until stiff peaks form.

In another bowl, mix the egg yolks with sugar and vanilla essence until creamy.

Gently fold the egg whites into the yolk mixture.

Sift in the flour and fold until just combined.

Add the melted margarine and mix gently.

Pour the batter into a greased 30cm round mold.

Bake until golden and a toothpick comes out clean.

Let cool before removing from the mold.

Decorate with fruit and apply the glaze.
