Peel and wash the sweet potato.
Dice the sweet potato into small cubes.
Add 1 tablespoon of olive oil to a heated pan.
Add the diced sweet potatoes to the pan and cook for about 10 minutes, stirring occasionally.
After about 3 minutes, stir and flip the sweet potatoes to ensure even cooking until they are tender and brown.
Add about 1 cup of mushrooms to the pan, breaking them into bite-sized pieces.
Cook the sweet potatoes and mushrooms together for about 5 to 7 minutes, stirring occasionally, until the mushrooms are browned and soft.
Add salt and pepper to the egg whites in a separate bowl.
Push the sweet potato and mushroom mixture to the side of the pan and add the egg whites to the empty space.
Allow the egg whites to cook for a few minutes, then combine them with the sweet potato and mushroom mixture.
Turn off the heat and sprinkle feta cheese over the mixture, allowing it to melt from the residual heat.
Plate the dish and add cilantro on top, either in the pan or after plating.
Serve with a toasted whole grain muffin or in a breakfast taco.
