Measure out 16 tablespoons of self-raising white flour and add it to a mixing bowl.
Add approximately 1 teaspoon of baking powder to the flour.
Separate an egg yolk and add it to the flour mixture.
Add 75 grams of Kerrygold butter to the mixture.
Grate the butter into the flour mixture using a grater.
Incorporate the butter until the mixture resembles coarse crumbs.
Add warm water to the mixture and stir.
Chill the mixture in the fridge for about an hour.
Peel and chop the swede, potato, and onion for the filling.
Season the chopped vegetables and beef with salt, pepper, and mixed herbs.
Roll out the chilled pastry on a floured surface using a rolling pin.
Cut out circles of pastry using a dinner plate as a guide.
Dot the filling with butter (optional) before adding it to one half of each pastry circle.
Spread egg wash around the perimeter of the pastry circle.
Fold the pastry over the filling and crimp the edges to seal.
Place the pasties on a baking tray lined with parchment paper.
Bake in the oven for 50 minutes until golden brown.
