Turn the dough out onto a surface and bring it together into a large singular mass without kneading.
Shape the dough into a square for easier division.
Divide the dough into 12 pieces, approximately 85 grams each.
Wrap each piece with plastic wrap and flatten into a disc.
Roll out each disc to approximately 3 mm thick and about 6 inches wide.
Fill the middle of each pastry with about 2 large spoonfuls of filling.
Brush some beaten egg at the bottom edge of the pastry.
Pull the top edge to meet the bottom edge to create a semi-circle and press down to seal.
Crimp the edges using a fork or twist them over for a traditional look.
Place all six pasties on a parchment-lined pan and brush again with beaten egg.
