Preheat the grill to about 350 degrees Fahrenheit.

Roast the vegetables to remove excess moisture and add flavor.

Coat the vegetables (mushrooms, bell pepper, red onion, garlic) with olive oil, kosher salt, and black pepper, and mix well.
