Danish Tartlets

Preheat the oven to 400°F (200°C).
Roll out the puff pastry on a floured surface until thin.
Cut the pastry into circles and place them in a tartlet pan.
Prick the bottom of each pastry with a fork to prevent puffing.
Bake the pastry shells for 10-12 minutes until golden and crisp.
In a skillet, melt butter over medium heat.
Sauté onions until translucent, about 3-4 minutes.
Add mushrooms and cook until soft, about 5 minutes.
Stir in flour and cook for 1 minute to form a roux.
Gradually add chicken broth, stirring until thickened, about 3-4 minutes.
Mix in cooked chicken, cream, parsley, salt, pepper, lemon juice, nutmeg, and thyme.
Fill each tartlet shell with the chicken mixture.
Bake the filled tartlets for an additional 10 minutes.
Let cool slightly before serving.
