Greek yogurt reduces calories while maintaining creaminess

Mince the shallot and slice the garlic.

Melt butter in a large fry pan over medium heat.

Add minced shallot and sliced garlic to the pan and sauté.

Season with salt and pepper.

Pour in white wine and let it reduce until there's just a little left in the pan.

Add heavy cream to the pan and heat until hot and bubbly.

Add fresh spinach to the pan, cooking it down until wilted.

Stir in grated parmesan cheese until melted and combined.

Serve warm as a side dish, optionally garnishing with more cheese or breadcrumbs.
