1 cup sweet grape tomatoes
1 sliced shallot
1/2 cup green and greek kalamata olives
2 tablespoons brine from olives
2 tablespoons gustare vita capers
2 tablespoons fresh mint
2 tablespoons chopped parsley
1 teaspoon lemon juice
2 tablespoons minced garlic

Combine 1 cup of no salt added garbanzo beans (drained and rinsed), 1 cup of sweet grape tomatoes, 1 sliced shallot, 1/2 cup of green and greek kalamata olives with 2 tablespoons of brine, 2 tablespoons of gustare vita capers, 2 tablespoons of fresh mint, 2 tablespoons of chopped parsley, 1 teaspoon of lemon juice, 2 tablespoons of minced garlic, and another 1/2 teaspoon of salt and pepper in a bowl.

Mix the ingredients together.

Top each sweet potato half with whipped feta and the garbanzo bean mix.
