Make marinade by combining fresh garlic, sliced scallion, chopped white onion, cumin, salt, black pepper, canola oil, and Pacifico beer in a Ziploc bag.
Add strip steaks to the marinade and refrigerate while preparing arepas.
Mix pre-cooked dehydrated arepa flour with water, salt, and some oil and shredded cheese to form the dough.
Cover the dough with plastic wrap and let it sit for 15 minutes.
Divide the dough into four equal balls, keeping them covered with a damp towel.
Flatten each dough ball into a flat cake using palms.
Melt butter in a non-stick skillet and fry the arepas on each side until golden brown.
Finish cooking arepas in the oven.
Pat the marinated strip steaks with a paper towel to remove excess liquid before grilling.
Season steaks with salt and pepper and grill on a screaming hot grill until desired doneness is achieved.
Let the grilled steaks rest before slicing them thinly for serving.
Assemble arepas with sliced steak, fresh onion, lime, and cilantro.
