Cut the pepperoni in half and then into chunks for easier processing.

Place the pepperoni chunks into a food processor and pulse until finely ground, being careful not to over-process.

Mix the sour cream in a bowl to ensure a creamy consistency, avoiding any moisture separation.

Layer about 3/4 of the mixed sour cream into an 8x8 glass baking dish using a spatula to smooth it out.

Add the ground pepperoni on top of the sour cream layer.

Pour hot and medium salsa over the pepperoni layer, adjusting spice level to preference.

Top with the remaining sour cream mixture, smoothing it out again with the spatula.

Serve with Scoops chips for dipping.
