Mix 2.5 teaspoons of yeast with 1/4 cup of warm water and 1 teaspoon of sugar; let sit for about 5 minutes until bubbly and foamy.
Melt 4 tablespoons of butter in the microwave and let it cool down.
Heat 3/4 cup of milk in the microwave for about a minute until warm (between 105 and 110 degrees).
In a mixing bowl, combine 3 tablespoons of sugar, 1 cup of flour, and 1 teaspoon of salt; add the warm milk, 2 tablespoons of melted butter, and 1 beaten egg; mix until smooth.
Add the remaining 2.5 cups of flour to the mixture and mix until shaggy.
Dump the dough onto a floured surface and knead for about 3 minutes until it forms a smooth ball.
Place the dough ball in an oiled bowl, cover with plastic wrap, and let it rise in a warm place for 30 minutes.
Prepare the jalapeno popper filling by removing seeds and membranes from 1-2 jalapenos, finely dicing them; use 1 jalapeno if it's spicy enough.
In a medium bowl, combine 8 ounces of room temperature cream cheese, 1/2 teaspoon of salt, 1/2 teaspoon of ground black pepper, and the diced jalapeno; add 1 cup of shredded cheddar cheese and stir to combine.
Cut the remaining jalapeno into slices for later use.
Liberally butter a bundt pan and melt 4 tablespoons of butter in a small dish.
Once the dough has doubled in size, punch it down and divide it in half, then divide into pieces smaller than a golf ball (about 1.5 inches).
Press each dough ball flat, add about 1/2 teaspoon of jalapeno popper filling, seal the edges, and roll back into a ball.
Roll the filled dough balls in melted butter and start adding them to the bundt pan.
Continue filling and rolling the dough balls for about 15 minutes, optionally getting a helper to speed up the process.
After the first two layers of dough balls are in the pan, add some cheddar cheese and jalapeno slices; layer on the rest of the filled dough balls, then top with more cheese and jalapeno slices, and drizzle with hot sauce.
Cover the bundt pan with plastic wrap and let it rise for one more hour.
Uncover and bake in a preheated 350°F oven for 25 to 35 minutes until golden brown on top.
Let it sit in the pan for 10 minutes, then use a knife to loosen the edges before flipping it out of the pan.
