Flour the surface and hands to stretch the pizza dough, shaping it into an oval.
Add taco sauce as the pizza base, followed by pepper jack and cheddar cheese, then chunks of cooked habanero sausage, refried beans, tomatoes, jalapenos, red onion, and black olives on top.
Add mesquite wood chunks to the coal bed for flavor and ensure the pizza stone is at 450 degrees.
Launch the heavy pizza onto the grill, checking the bottom of the crust for doneness.
Fry a tortilla in hot oil until it puffs up, indicating it’s ready.
Once the pizza is done, add cilantro, Cotija cheese, and dollops of sour cream on top.
Add pieces of the fried tortilla to the pizza for extra flavor.
