Start by preparing the ingredients for the cazuela de pollo.
Chop the onion into strips and the bell peppers into slices.
Cut the pumpkin into chunks, ensuring they are not too thin for texture.
Prepare the carrots by cutting them in half and then into thicker pieces for texture.
Crush the garlic cloves to release their flavor and set aside.
Chop the green beans and set them aside as well.
Heat a pot over medium heat and add a drizzle of oil.
Once the oil is hot, add the whole chicken pieces to sear them until golden brown.
Sprinkle some salt over the chicken while it cooks to enhance the flavor.
After the chicken is browned, add the chopped vegetables (onion, bell peppers, carrots) into the pot.
Stir the vegetables around to mix with the chicken and let them sweat for a few minutes.
Pour in hot water to cover the chicken and vegetables, then bring to a boil.
Once boiling, cover the pot and let it simmer for about 25 minutes.
After 25 minutes, check the vegetables; they should be tender but not mushy.
Peel the potatoes and cut them into chunks, then add them to the pot.
Add the corn and pumpkin pieces to the pot as well.
Let everything cook together for another 20 minutes.
After 20 minutes, add the rice, ensuring it is evenly distributed in the pot.
Add a pinch of cumin and oregano for flavor.
Stir everything gently and cover the pot again, allowing it to cook for an additional 15 minutes.
Finally, add the green beans and let them cook for 5 more minutes until tender.
Once everything is cooked, serve the cazuela de pollo hot, garnished with chopped cilantro.
