3 cups of semolina flour
1 tablespoon of salt
2 teaspoons of sugar
about two cups of warm water
1 cup of butter

In a large bowl mix the flours, salt, and sugar and mix either with a whisk or hands.

Add a cup of water and mix.

Knead the dough and mix in the dry flour in the corners.

Keep adding water a little at a time and knead until you get a soft and elastic dough.

Cut a small piece of dough the size of a golf ball and roll it to a roughly rectangular shape.

Oil them and cover with plastic wrap.

Let them rest for around 30 minutes.

Spread the dough, dot with soft butter and oil, and sprinkle with semolina flour.

Fold the dough toward itself and cover with plastic wrap again.

Preheat a heavy cast iron skillet over medium heat.

Flatten the dough triangle into a circle.

Place on the skillet, count to 4 seconds, flip it over, oil it, and flip it back.

Keep turning the Melloui until golden brown.
