Cut the bok choy, slicing the greens into thin pieces and roughly chop all the greens together to have at least three cups worth.

3

Pour a 14 oz can of coconut milk into a 9 by 13 inch baking dish.

4

Add 3 tablespoons of red Thai curry paste to the coconut milk in the baking dish.

5

Pour 1/2 cup of water into the empty coconut milk can and stir to get the last drops of flavor, then pour this water into the baking dish.

6

Add 3 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 2 teaspoons of sesame oil, and 2 heaping teaspoons of minced garlic to the baking dish.

7

Whisk everything together until combined.

8

Add the chopped bok choy greens to the baking dish and stir to coat them in the coconut curry sauce.

9

Arrange the frozen dumplings in a single layer on top of the bok choy and sauce.

10

Spoon some of the coconut curry sauce on top of each dumpling.

11

Cover the baking dish with tin foil.

Bake the dumplings in the oven at 375° F for 25 to 30 minutes.
