Soak the pork belly in the boiling water for about 20 minutes to remove blood.

After 20 minutes, add the pork belly to the broth and simmer for 40 minutes.

After simmering, let the pork belly rest at room temperature for 10 minutes.

Slice the pork belly thinly, about 2 mm thick.

Serve the sliced pork belly with lettuce, Korean kimchi, and a sauce made from 1 teaspoon of Korean bagoong, 1 teaspoon of Korean chili powder, and 3 teaspoons of water.
