1 pound dried pinto beans
6 cups water
1 teaspoon fine sea salt
1/2 teaspoon baking soda

Sort and rinse the dried pinto beans by pouring them onto a sheet pan and looking for any debris or damaged beans.

Pour the sorted beans into a fine mesh strainer and rinse them under cold water.

Transfer the rinsed beans into the Instant Pot.

Add 6 cups of water to the pot.

Sprinkle in 1 teaspoon of fine sea salt and 1/2 teaspoon of baking soda.

Add 1 peeled and halved onion and 2 bay leaves to the pot.

Lock the lid of the Instant Pot and set it to pressure cook at high pressure for 40 minutes.

Once the timer goes off, perform a quick release of the pressure.

Remove the onion and bay leaves from the pot.

Ladle the beans into two cup containers covered with broth for refrigeration or freezing.

To thicken the broth, set the Instant Pot to sauté mode on medium and simmer for 15 minutes.

After 15 minutes, check the consistency of the beans and broth.
