2.5 cups dried pinto beans
1/4 large white onion
2 garlic cloves
2 tablespoons chicken bouillon
2 bay leaves
8 cups water

Strain the dried pinto beans to remove any debris or rocks.

Rinse the beans to get out any dirt.

Pour the rinsed beans into the Instant Pot.

Add 8 cups of water to the Instant Pot.

Add 1/4 of a large white onion, cut in half, to the pot.

Add 2 garlic cloves to the pot.

Add 2 tablespoons of chicken bouillon and mix to dissolve it in the water.

Add 2 bay leaves to the pot.

Close the lid of the Instant Pot and set it to sealing.

Set the Instant Pot to pressure cook on the highest setting for 55 minutes.

Once the cooking time is complete, let the beans rest for about 20 minutes.

Carefully release the steam by pushing the steam release valve down.

Open the Instant Pot once the steam is released and the pressure is gone.

Add salt to taste if desired.
