Pinto beans are a staple in Mexican cuisine, often served as a side dish or used in various traditional recipes. They are celebrated for their creamy texture and rich flavor, making them a favorite in many households. Today, pinto beans are enjoyed worldwide, often featured in vegetarian dishes and as a protein source in various cuisines.
Pour 1 pound of dry pinto beans into the pressure cooker.
Add 2 cloves of smashed garlic to the beans.
Add 1 tablespoon of salt to the mixture.
Add 1 bay leaf to the beans.
(Optional) Add 1 teaspoon of chipotle chili powder for a smoky flavor.
Top off the beans with 4-5 cups of water, ensuring the water is about an inch above the beans.
(Optional) Add 1 tablespoon of oil to prevent foaming during pressure release.
Stir the mixture quickly to combine the ingredients.
Put the lid on the pressure cooker and set it to pressure cook on high for 30 minutes.
After cooking, let the pressure release naturally for about 10 minutes before manually releasing any remaining pressure.
Open the lid and check the beans; they should be perfectly cooked.
Scoop out the beans and check the texture; adjust cooking time if you prefer firmer or softer beans.
Garnish with chopped green onions and optional crumbled bacon before serving.
